Millionaires Bacon was created at Sweet Maple restaurant in Lower Pacific Heights in San Francisco. The owners spent many months perfecting this recipe, and this dish contains all the components of highly delectable food: smoky, salty, sweet, and spicy. Given the name, you're not quite sure if you have enough class to make this dish, but as it turns out it's quite simple. In fact, the supplementary ingredients you probably already have in your kitchen cupboard. You can definitely make this dish at home. The key is getting some thick-cut grass-fed smoked (original recipe requires applewood) bacon.
Ingredients:
- 1 pound of thick-cut smoked bacon (1/2 inch slices preferable - You can have your butcher slice pork belly to your specifications) - 1.5 tablespoons cayenne pepper
Directions: - Preheat the oven to 250 degrees
- Sprinkle red pepper chili flakes on top (for a touch of additional heat)
- Place in the oven and cook for 4 hours
Once you put it in the oven, nothing seems to be happening for the first hour. It then starts smelling really good as the fat starts to render from the bacon. The brown sugar starts to melt and turn clear on top of the bacon. After that, the brown sugar begins to caramelize. The smell quickly becomes intoxicating. After a long 4 hours, this dish is finally ready. When you take it out of the oven, the bacon is in perfectly crisp strips of golden caramelized deliciousness. It also has the perfect touch of spice from the cayenne and chili flakes. Underneath, the baking sheet contains a smoky, bacony caramelized glaze that looks like it would make the perfect bourbon drink or cake glaze - feels like a crime to throw this out.
Millionaires Bacon is certainly indulgent...more of a dessert. The perfect food for brunch. Millionaires Bacon can be found at a number of establishments (including Scup's in the Harbour) and a similar version called Billionaire's Bacon, which was developed at Mortimer's in New York City.
